  • Optional Brush - To apply heavy cream for brushing the tops of the scones.

Instructions

Dry Ingredients:

  1. Whisk together in a large bowl:

  2. 2 cups (250g) all-purpose flour

  3. 1/2 cup (100g) granulated sugar

  4. 2 and 1/2 teaspoons baking powder

  5. 1 teaspoon ground cinnamon

  6. 1/2 teaspoon salt

Grate the Butter:

  1. Grating the butter is likely the hardest and most time-consuming part of this recipe, but don’t worry—it’s not too difficult! A little bit of elbow grease will get you there. This technique ensures that the butter stays cold, helping to create the perfect scone texture.

  2. Grate 1/2 cup (113g) frozen unsalted butter and add it to the dry mixture.

  3. Use a pastry cutter, forks, or your fingers to incorporate the butter until it forms pea-sized crumbs.

Wet Ingredients:

  1. Whisk together in a small bowl:

  2. 1/2 cup (120ml) heavy cream

  3. 1 large egg

  4. 1 and 1/2 teaspoons pure vanilla extract

  5. Drizzle the wet ingredients over the dry mixture and fold in 1 heaping cup (140g) fresh or frozen blueberries until the dough is just moistened.

Shaping & Chilling:

  1. Turn the dough out onto a floured surface and shape it into a ball (it will be sticky).

  2. If too sticky, add more flour; if too dry, add 1–2 tablespoons heavy cream.

  3. Press into an 8-inch disc and cut into 8 wedges.

  4. Brush the scones with remaining heavy cream and sprinkle with coarse sugar (optional).

  5. Refrigerate the scones for at least 15 minutes.

Baking:

  1. Preheat the oven to 400°F (204°C).

  2. Line a baking sheet with parchment paper or a silicone mat.

  3. Arrange scones 2–3 inches apart on the prepared sheet.

  4. Bake for 22–25 minutes, until golden brown around the edges and lightly browned on top.

  5. Cool for a few minutes before icing with vanilla icing (optional).

Notes

Leftovers

Leftover scones, whether iced or un-iced, keep well at room temperature for up to 2 days or in the fridge for up to 5 days. Reheat in the oven for a few minutes to bring back that fresh-baked taste.

Troubleshooting Your Scones

If your scones didn’t hold their shape, don't worry! Here are some common causes and tips for fixing them:

  1. Overly Wet Dough: If your dough is too moist, it will spread during baking. To avoid this, measure your ingredients carefully and add wet ingredients gradually until the dough just comes together.

  2. Warm Butter: Butter that’s too soft can cause spreading. Use cold, or even frozen, butter and handle the dough minimally to keep the temperature low.

  3. Overmixing or Overhandling: Overmixing develops gluten, which can make your scones dense and lead to spreading. Mix until ingredients are just combined and handle gently.

  4. Incorrect Oven Temperature: Baking at too low a temperature can prevent the scones from setting quickly. Preheat your oven fully to the recommended temperature before baking.

  5. Improper Shaping: Be sure to use a sharp cutter, and avoid twisting when cutting the dough, as this can affect the rise and lead to spreading.

Tips

  • Cold butter: Ensure the butter is frozen and grated into the mixture for a flakey, tender scone.

  • Minimal mixing: Overworking the dough can lead to dense scones, so mix just until everything is moistened. It should look like big crumbs coming together.

  • Use a sharp knife: For cutting the scones into wedges, a sharp knife or bench scraper works best to get clean cuts without squashing the dough.

  • Fresh baking powder: I know we are all guilty of this, but make sure the baking powder is fresh. How to check if your baking powder is still active; by pouring some boiling water over the baking powder. If it bubbles, it's still good. If not, it's no good!
